What Is HPP? - HPP stands for High Pressure Processing. There area  few other names for it as well, including Bridgemanization and Pascalization (named for French scientist Blaise Pascal). HPP is a method for preserving food by introducing it to a high amount of pressure. Through this process the food becomes sterilized, making it safer for storing and transportation. HPP inactivates some of the microorganisms found inside our foods, such as yeast, mold and other bacterias. By “turning off” these microorganisms, your food can be stored longer without it going bad, ensuring that it is fresh when it finally arrives to you.
Where Is HPP Used? - Many food manufacturers use HPP to store their foods. It is prominently used in foods such as fruit and yogurt, but other foods can be stored this way as well. The pressure-tolerant spores found in acidic foods can not survive in environments with low pH levels, so they are the primary beneficiary of HPP methods.
Why Use HPP? - There are many different methods to store and transfer food, so why use HPP? For starters, HPP is better able to store the food than other methods. With HPP, the food products can last longer before they start to spoil. On top of that, HPP has no real negative effects on the food. It will still have the same taste, nutritional value, and appearance as it did before it was stored. Not every storing method can boast this.
Why Do I Need To Know About HPP? - There are two kinds of people who need to know about HPP: people who work with food, and are looking for the best way to store it, and people who care about the food they are eating. If you work with food, it is your responsibility to make sure that you are doing everything you can to maintain the integrity of your food products until they are able to reach your customers. It is not enough to simply put it in plastic wrap and assume that is enough. If you are one of the people who cares about what you are putting into your body, then you want to know that the food you are eating has gone through every precaution to see that it does not spoil before getting to you. You want your food to be safe, but also not lose its quality because of its storing method. With HPP, you don't have to worry about that.
